Independance Day


Happy Birthday America!

I hope everybody had a safe and fun 4th of July. We had a perfect day weather wise, it was in the mid 80's and not a cloud in the sky. Almost every July 4th has been spent at the lake and this year was no exception. My mom hosted family and friends. We swam, we ate, we had fireworks and lots of laughs. 

I was in charge of bringing dessert, our traditional July blueberry dessert. This year I thought I would put a new spin on our annual favorite.  I would like to take full credit for this genius idea, but I must admit I saw something similar on Pinterest. Instead of making one pan of the dessert I made individual desserts in mason jars. The festive paper on the lids was my idea!


Blueberry Dessert. YUM!

Blueberry Dessert

1 1/4 C graham crckers crumbs
1 1/4 C sugar
1 stick butter
11 oz cream cheese
1 1/2 tsp vanilla
2 packages of dream whip
1 C cold milk
1 can blueberry pie filling

Crust:
combine graham cracker curmbs, 1/4 cup sugar and one stick of melted butter

Press into 8x8 glass pan (or divide into nine mason jars) and bake at 425 degrees for 5mn.


Filling:
combine cream cheese, and 1 cup sugar, beat until stiff. Fold in the dream whip, vanilla and cold milk. 

pour over cooled crust and refrigerate until filling is set. Top with either fresh blueberries or blueberry pie filling.

I surprised everybody with another family favorite. Ice box pickles. I remember the first time I had these pickles was when I was a kid and a family friend brought over an ice cream bucket full of them. They are refreshing on a hot summer day.

Ice Box Pickles



Ice Box Pickles

7 C sliced cucumbers
(do not peel)
1 C sliced green pepper
1 C sliced onion
2 tsp salt
2 tsp celery salt
2 C white sugar
2 C white vinegar

Combine all ingredients, cover and refrigerate. Stir occasionally for two days. Pickles are ready to eat on day three.

You can continue to add cucumbers to the brine as you eat them.

The rest of the weekend was spent getting ready for our trip around Lake Superior. We are leaving Friday and I can't wait!! 

The Lefton angels in the first picture are mine. I found the little boy on Etsy and the girl on Ebay. I think they make a cute pair. It looks like the girl is telling the boy to put his firecrackers in her bucket. I love them and will enjoy putting them out every year.
